วัตถุเจือปนอาหาร (Food Additive) คือ วัตถุที่ตามปกติมิได้ใช้เป็นอาหาร หรือส่วนประกอบที่สำคัญของอาหาร ไม่ว่าวัตถุนั้นจะมีคุณค่าทางอาหารหรือไม่ก็ตาม แต่ใช้เจือปนในอาหารเพื่อประโยชน์ทางเทคโนโลยีการผลิต การแต่งสีอาหาร การปรุงแต่งกลิ่นรสอาหาร การบรรจุ การเก็บรักษา หรือการขนส่ง ซึ่งมีผลต่อคุณภาพ มาตรฐาน หรือลักษณะของอาหาร ทั้งนี้ให้หมายความรวมถึง วัตถุที่ไม่ได้เจือปนในอาหาร แต่มีภาชนะบรรจุไว้เฉพาะ แล้วใส่รวมกับอาหารเพื่อประโยชน์ดังกล่าวข้างต้นด้วย เช่น วัตถุกันชื้น วัตถุดูดออกซิเจน เป็นต้น โดยไม่รวมถึงสารอาหารที่เติม เพื่อเพิ่มหรือปรับให้คงคุณค่าทางโภชนาการของอาหาร เช่น คาร์โบไฮเดรต โปรตีน ไขมัน เกลือแร่ และวิตามิน
ประโยชน์ในการใช้ วัตถุเจือปนอาหาร (Food Additive)
เพื่อรักษาคุณค่าทางโภชนาการของอาหาร ให้มีความคงตัว เพื่อให้ได้ส่วนประกอบของอาหารเฉพาะในการผลิตอาหาร สำหรับกลุ่มผู้บริโภคที่มีความต้องการทางโภชนาการเฉพาะ เพื่อเพิ่มประสิทธิภาพในการรักษาคุณภาพในอุตสาหกรรม ในการผลิตในปริมาณมาก หรือปรับปรุงคุณลักษณะด้านประสาทสัมผัส โดยไม่เปลี่ยนแปลงคุณภาพและลักษณะของอาหาร เพื่อช่วยในการผลิต การแปรรูป การปฏิบัติ การบรรจุ การ
